About this Coffee
Las Nubes (“The Clouds”) is the highest farm of producers Roberto Mata and his son Michael. At 1930m the peak of this 4 hectares large farm indeed seems to reach the clouds, overlooking Santa Maria and the valley of Dota. Here the Mata family grows several varietals like Caturra, Catuaí, SL28 and Geisha. We had the honor to visit this amazing farm in February together with the whole Mata family.
Roberto Mata is a well known veteran, when it comes to coffee in Costa Rica! He lives with his big family in San Marco de Dota, Tarrazu. There are all together 22 family members. He has 12 siblings, 5 children and 12 grandchildren. His daughter Monica was at 13 the youngest Barista in Costa Rica and studied food technology & nutrition. She helps him a lot and gives a lot of advises when it comes to new types of fermentation.
Harvest & post-harvest
Cherries are hand picked and sorted by their workers. After quality check the cherries are pre-fermented under direct sun for 45 hours, followed by pulping and 30 days of honey process on African beds at Roberto's own micro-mill.
